The brandy Pisco, made from the grapes grown in the Elqui Valley near La Serena, is an excellent base for cocktails such as Piscola, Pisco Sour or Mango Sour. The Pisco Sour was invented in the Morris Bar in Lima, Peru, and also became popular in Chile many decades ago. However, the preparation varies a little from country to country, although the lime juice provides that fresh, sour taste in both versions.

Ingredients per person:
9 cl pisco
3 cl lime or lemon juice
1-2 tablespoons icing sugar
2 ice cubes
1 egg white
Put all the ingredients in a mixer and blend at medium speed.
Then serve immediately in a champagne glass.
